Sanitary and Economic Impacts of Honey Commercialized in the Municipality of Fortaleza – CE

Honey is a food product that strengthens the country’s rural economy, serving as a complementary source of income on small properties. Its growing demand is driven by the search for a healthy lifestyle, which has expanded the number of consumers. It is observed that this increase in consumption, together with global demand, impacts supply and tends to raise prices. In this context, in order to assess the quality of honey available in the formal and informal markets of Fortaleza, this research seeks to study the physicochemical characteristics of this food and compare its qualities with the standards established by current legislation, as well as to identify possible economic and sanitary impacts. Thus, the aim is to evaluate the qualification of the honey available and to address potential damage to consumer health and to the regional economy, due to the commercialization of honey not certified by state or federal authorities in local markets. Thirteen samples were collected at various locations in the city of Fortaleza, of which seven did not possess an inspection certificate and six presented the proper certification. The results obtained from the analysis of the samples made it possible to verify whether what is being offered meets the minimum standards for commercialization. In the informal market, only 14.28% complies with regulatory standards; however, in the formal market, approximately 17% does not meet the specifications. Thus, these products partially comply with the quality standards desired by consumers, contributing to the honey production chain in the State of Ceará through the commercialization of quality products.
